        Although intended as a college-level textbook for technical writing students, many working professionals, both writers and engineers, will find this book useful as well. It provides a sound discussion of fundamental techniques and processes with extensive examples. The chapters on writing, collaboration, writing ethically, and writing for international readers cover topics that are important in business, yet not often covered in textbooks. My only wish is that part 3 included more document types to make this book an even more useful daily reference.

        Reading and absorbing this text will strengthen key skill areas of technical communication. Even if you're not reading this text in conjunction with a technical writing course, I highly recommend you take the time to do at least one of the exercises at the end of each chapter.
        Check out the accompanying web site that supports the text. One gripe: some of the chapters have self-tests, and some don't. However, there is no way to tell until you've clicked on the link, and waited for a blank page.

        This text is well written, and focused like a laser beam on the challenge of creating information that adds value to the reader, rather than burdening the reader with time wasting prose.

        Favorite chapter: Creating Tables and Figures.

        The book was required for a Junior level course I'm taking at a local college and that is why I bought it. My personal opinion is that there were too many writers on this book. It is poorly organization and broke some of the basic rules in writing a reference book, such as referencing various studies without actually providing the citation for the study.
        I personally feel there are far better references than this one for technical writing.

        I used this book for my technical writing class. I found the readings straightforward. Sometimes, the actual chapters were too common sense. This book really shines in its use of examples. There are examples of each type of document. The handbook in the back is also a handy reference.

              Description:
              Online business reporting and the benefits thereof are widely reported in the academic and practitioner literatures. Much is made of its potential to transform information supply and demand and the dominant focus of the current discourse is on the automation and publishing aspects of online business reporting. These we argue are necessary aspects but present a narrow conception of the role of business information in organisations. Current research lacks an information management perspective, which focuses attention on the design, management and intellectual organisation of business information. Drawing on a preliminary study of the adoption and implementation of business reporting markup languages (in particular XBRL) in the Australian financial sector we draw out the issues for research and practice. We present a complementary perspective that makes information and information work visible and takes into account the complex inter-relationships between the activities of humans and the information itself.

                          Let me qualify this by saying for a number of years I taught Garde Manger at a Le Cordon Bleu school. I probably own every text book on the subject as it has remained near and dear to my heart as I moved back to the restaurant world.

                          This is probably the BEST text on this subject I have seen; so much so that I plan to look into their other books. Running the gamut from cold appetizers to a primer on ice sculpting to a discussion of centerpiece carving, this book provides clear concise examples of each process. The full color pictures are fantastic and a welcome addition to the instructions provided. If I was teaching again, this would be my textbook of choice.

                          Finally someone has written a cooking instruction book that is suitable for the professional and home chef. This book is a must have for anyone serious about learning to cook. It fills in all the holes that will allow you to interpret and adjust recipes from other sources by providing you written and visual instruction along with interesting recipes from around the world. While it was written for the culinary education market this is really the first book any new cook should own. Great wedding or housewarming gift, a valuable reference for years.

This book is perfect, it has it all, great illustrations, good lay out & very clear instruction. Modern Garde Manger was obviously written by guys that know how to teach their subject. The chapters on meats, game, poultry & fish are the best I have ever seen. This book is truly five star material & I know I will learn so much from it.

This book will help me to learn what I need to know if I want to make it on to the big time. It's full of expert level information I've never seen before. The authors that wrote the book really know their stuff. The chapters on meat, fish and poultry fabrication have the best step by step photos i've seen in a text book..and I should know. My family has been giving me cookbooks since I could remember, finally I've got a book with new ideas and information I've not seen before. Buy this book for your personal library. It's in a class by itself.

                          I know that Dr. Cullen knows what he is talking about, I know that this book is the standard to which other books on management are held, and it is almost always required reading, but this book is instant somnia. Some of the information also seems a little dated and cliche now that every manager in the country uses these techniques. Reading it in conjunction with The Chef Manager really helped me plow through.

                          This guide to culinary careers is terribly overpriced for the information it contains. The quick descriptions of different culinary careers have some value, as do the appendices listing culinary publications and organizations. However, the career descriptions are quite short and the advice is unremarkable. On the topic of finding a culinary mentor, for example, the author advises you to find one. That's pretty much it - no discussion on how to choose a suitable mentor, or how to convince an experienced professional to take you on as a protege. The book mentions the apprenticeship system but doesn't explain how to find an apprenticeship. The section on choosing a culinary school/vocational program is much better, though.

                          Something trumpeted in both the book description here and on both covers of the actual book is the inclusion of up-to-date information on salary statistics and earning potential for the spectrum of culinary professionals. It must have been printed in invisible ink, because I don't see it *anywhere* (and yes, I have this exact edition). This promise was my primary motivation for getting the book, so I was very disappointed (disgruntled, even) that this information is NOT in the book after all.

                          Don't spend money on this book unless you're just looking for a quick overview of the career possibilities. That's the one thing the author does well - it describes (in brief) a wide range of culinary careers beyond the obvious white-linen restaurant ones.

                          This book could have been greatly improved if it had expanded on the career descriptions, perhaps including short interviews with actual culinary professionals, especially those in roles like institutional cooking or food research. Of course it also would have been much better if it had actually included the promised salary information, too.

                          It's a good book to have in a library or career center, but it's not much use for your home reference bookshelf.
