This is a very concise, well-organized overview of what it takes to run a successful inn. I really liked that it also includes a no-varnish look at the downsides to this business. Well put together and full of useful information, especially the financial data and analysis.

This is a must-read for aspiring innkeepings, written by leaders in the industry, with a good balance of experiences. When reading, bear in mind that it was written before the Internet became the prime source of reservations for innkeepers, so all the computer related marketing and operations info is not current.

I read this wonderful book 10 years ago while planning to become an innkeeper. Now that I am a successful innkeeper, I refer to it constantly and am incredibly grateful to the authors. I credit the information learned in this book as a reason for our success. It helped us ask the right questions, particularly about whether or not we had the personalities to make it in this diffficult business. Also, it was invaluable in creating our business plan. Don't open a B & B before reading this.

You betcha!!! My middle name is Innes (no joke!!!!!) but it might as well be "inns"(!!!!!), that's how much I wanted to be an innkeeper, and Mary Davies' book is "inn" (!!!!!!) the right place "inn" (!!!) my bookshelf. No, but seriously, with my sense of humour and my wife Marjorie's overly solicitous manner and ability to project her prurient judgmentalism and dissaproval wordlessly, we had a headstart in that we were the perfect couple to run a Bed-and-Breakfast. Even the best need a hand though, and this book is a must-read for those who don't want to make a dog's dinner of this rewarding career.

As an accountant, I really appreciated the financial planning section of the book. It has helped us to realistically assess different properties in making our investment decision. This book is a must for anyone seriously considering a bed and breakfast or a small inn. Being able to estimate costs and revenues up front is imperative for success.

                A beautiful book with great information and many gorgeous pictures. The history and pearl formation information was very helpful.

                This book is quite thorough, as mentioned in the other reviews. The "but" is major, though.... The type font is VERY DIFFICULT on the eyes. I absolutely love pearls, drool over them, even. I gobble up any information on them. If the GIA offers a specialization in them, I will get it. But the lines in this font are so thin, and the size is so tight and small, I haven't been able to finish a fourth of the book, and I've had it over a year!

                Every time I try to read it, I have to put it down after only a few pages. By the way, my vision is great, corrected to better than 20/20. Perhaps my copy (bought at the Metropolitan Museum of Art store) was printed when the ink source was running low...

                This is an excellent, well illustrated book with everything you could want to know about pearls - how they occur naturally, the biology of this, how they are induced artificially ( cultured pearls), how they are faked, the optics of their appearance and how they have shaped history and , of course, pearl jewellery.

                The hard bits are explained without jargon, in intelligeable words but without losing detail.

                This truly is a history book, written in a very accessable style with lots of great photos and illustrations. If there's anything else to know about pearls then I suspect it might just about fill up the back of a postage stamp with room to spare. A great resource for amateurs and professionals alike; I thoroughly enjoyed it and it's well worth the money.

                    The Chesapeake Bay oyster has changed little, if at all, in the century since this popular book was published. But the oyster harvest has fallen to its lowest level on record--from 15 million bushels at the turn of the century to fewer than 100,000 bushels in 1993. What was once the most bountiful source of oysters in the world has become nearly exhausted. More than a century ago, explains Kennedy T. Paynter Jr. in the introduction to the present volume, scientist and Maryland state official William K. Brooks warned that this day would come.

                    A classical morphologist by training, and one of the Johns Hopkins University's first and most distinguished faculty members, Brooks had "tonged oysters in five different states" when the governor of Maryland appointed him Oyster Commissioner in 1882. The Oyster, first published in 1891, is a popular scientific account of what he knew and what he learned on the job. After describing the basic biology of the oyster, Brooks discusses its tremendous reproductive capacity, what it eats, how it lives, why it thrives in the Bay, and what role it plays in the Bay's ecology.

                    But The Oyster is more than a simple biology text. It is also a critical scientific review of oyster management in the Chesapeake Bay, commenting on and criticizing contemporary laws and regulatory practices--many of which are still in place today.                     This reprinting of a book first printed over a hundred years ago is an enjoyable, if somewhat depressing review of the managment and mismanagement of the oyster resources of the Chesapeake Bay. The first half is a review of the biology, and the second goes into all of the politics and problems of trying to manage an open fishery. Much of what is said rings true today.

                    The opening line of this book is:
                    "WHAT YOU NOTICE in the month of May is the tiles, like roof tiles but white, stacked by thousands at one point after another along the shore."

                    The last line on page 203 is:
                    "BENEFICIENT Oyster, good to taste, good for the stomach and the soul, grant us the blessing of your further mystery."

                    In between these 200 pages concerning oysters, Eleanor Clark wrote a definitive classic on the amalgamation of geography, human history, ecology, and commerce. One reads much of the mystery or the character of this mollusk at this Breton coast. It expresses itself through the human being just as it does through its own.

                    These oysters of Locmariaquer can be appreciated or thought of in two ways. How they are farmed in this northwestern Breton Coast can be thought of as being incidental. The important thing, some argues, this is a place of scenary, good oyster eating, and tourism. Or one can see with an understanding eye, as the author wants the reader to see, at the landscape. This Locmariaquer landscape, with the oysters, is repleted with the rich voice of its ancestors, myths, history, and human foibles.

                    Equipped with this behind the scene knowledge, the mystery of the Locmariquer mollusk is revealed. Now we can trippingly roll off our tongue why these Breton oysters are dear to the gourmet. Put on a few more dozens of these oysters on the barbie, won't you? No, not on the doll.


                    *Note: This book was published in 1964. In the 1970s, some if not all of the oyster varieties named in the book had been devastated by parasites. Today, the region is cultivating the hardier Japanese oyster, the Japanese naissain (the Gigas) variety, to sustain the industry and a way of life.

                    I read the book with great anticipation. Bought some oysters as well to go along with the whole experience - some little French ones. Prepared them as Ms Clark suggested. Ate them with a chilled chablis. Half and hour later - sick as dog, sick as dog. Turns out the best way to prepare oysters is not (repeat not) to let them sit on the back porch in the sun all day. Never make a mistake twice and won't eat those Belon oysters again. But the book was quite good

                    About 25 years ago I stumbled upon Eleanor Clark's history of the oyster beds in Normandy, or her memoir of living near the oyster beds. It's been a long time, but it was simply the best combination of food writing, history, travel writing and poetry that I ever read (yes, I'm reviewing a book that I read 25 years ago, but it stayed with me). My sister and her family are going to be living in Normandy, so I have to buy it for them, and reread it myself. It's unique; it makes every other book about travel and food and "our life in ...." seem pallid.
