Nava Atlas, whose illustrations embellish the book has put together an international collection of recipes from soups to desserts, including Chili Lentil and Rice Pilaf, Scallioned Potato Bake, Zucchini Pancakes Parmesan, Sun-Dried Tomato Focaccia Bread, and Fresh Peach Crumb Cake. Vegetariana is an essential cookbook for anyone who cares about healthful and delicious food.
From The Introduction-
My maiin intent when first producing the book was to put vegetarian cooking in a lighthearted context, so that the broad range of delicious foods and flavors would be showcased in an inviting, nonintimidating way. Why a new edition? Since the book was first written, many fascinating and healthful foods have become better known or more widely available. I wanted to include new recipes for foods such as tempeh, quinoa, seltan and others. More tofu recipes are here, too, since this versatile food is practically a supermarket staple and I'm constantly asked for ideas for its use.
Some of the original recipes have been slightly defatted in accordance with the current trend of keeping fat content low. While there are still some rich, special-occasion dishes here, most of the recipes will serve a basic, everyday fare for anyone who wants tasty and uncomplicated meals that are healthful as well as fun to make and eat. Nondairy soy alternatives have been suggested in many of the recipes. Those who use no dairy, as well as vegans, will find a wider range of recipes that they can use in this edition. Above all, this new edition of Vegetariana is the continuation of the celebration of vegetarianism and the vegetarian cookery that so many are embracing as a healthful and satisfying way of life.

This was my first vegetarian cookbook, and it was a great introduction to this style of cooking. Nava Atlas is a funny, talented writer and the recipes work. Not too complicated, but not bare bones either, I will always have a copy of this book around.

This was my second veggie cookbook and I use it all the time. Simple, easy to find ingredients, most recipies are about 30 minutes to make. Has both menu plans and individual recipies. nice illustrations too. thanks!

I have the original, published in 1984, and not only is it a fabulous cookbook - it also makes for interesting reading. The illustrations are wonderfully witty. Nava Atlas is simply the best. If you love to cook and enjoy reading cookbooks you won't find a better one that this.

Vegetarian With A Mexican Flair.......2003-05-23
Kippy Nigh's book provides an interesting view into the healthy side of Mexican cuisine with recipes that are appealing to anyone's palate, vegetarian or not. Of course, it is written in Spanish and the measurements are metric so that may put a crimp in the ease of reading if your brain is not fine-tuned in both. There are several wonderfully easy recipes for anyone who entertains Mexican guests---agua de horchata, agua de jamaica, and yummy atoles. There are also clever recipes that incorporate tofu and chile sauces. This book was recommended to me by an expert native Mexican chef which testifies to its authenticity and "buen sabor", good flavor---the touchstone and measuring stick to a Mexican and anyone else for that matter. I recommend the book to anyone who reads Spanish and desires help in learning some of the basics of Mexican cuisine, a cuisine that rathers naturally incorporates vegetarian principles.

This was the first ecuadorian cookbook I got in contact with, after my first few weeks in South America with only rough Spanish. It's ok for the beginning and I really liked the drawnings which explain some preparing techniques, which are mostly unknown outside South America.
Now after a few years with an ecuadorian wife and a fantastic cooking mother-in-law this cookbook is a little bit disappointing. The description of some recipes even with the drawings is poor, confusing or missing some ingredients and lackcing the taste of the real (fantastic!) ecuadorian kitchen. Also the selection of recipes is not really typical or complete for Ecuador. And at the end the book is not really cheap for the given quality, thin, hand written, no photos, and because of the translation in English and Spanisch only half of it recipes.
One "real and complete" standard ecuadorian cookbook for example is "La cocina ecuatoriana - Paso a paso" from the spanish publisher Lexus, about 270 pages, ISBN 9972-625-61-3. A little bit expensive but really worth the price. But may be difficult to get outside Spain and Ecuador.
World Culture Cooking and a Spanish Lesson, too!.......2000-05-28
I think this is an excellent cookbook for adding culture to your recipes and everyday eating. The illustrations are outstanding and create a mouth-watering desire to make the recipes. The recipes are rated from easy-to more time-consuming so its very helpful in planning. Bi-lingual recipes make it accessible to a variety of audiences and all of my Spanish-speaking friends here in San Diego. I'm improving my own Spanish from the side-by-side English/Spanish translation!
The Ecuador Cookbook.......2000-05-22
Very well-written in English and Spanish. Provides concise instructions on how to prepare each delicious dish, and all ingredients are easy to find. What's most important: the writers (Buchanan and Franco) did a great job in using the same ingredients and preparation typical of the Ecuadorian Cuisine, exactly as my grandmother used to make. This book is perfect for the amateur gourmets and "coinosseurs" who enjoy good food (La buena mesa). My husband (not Ecuadorian, like me) has also fallen in love with Ecuadorian food. Smart man!... Please keep writing about Ecuadorian food!
