For over an hour they lay there expectantly, but nothing stirred near the den; then they too slipped away, silently as the little wild things, and made their slow way down the brook, hand in hand in the deepening shadows. Bill Buford's funny and engaging book Heat offers readers a rare glimpse behind the scenes in Mario Batali's kitchen. Who better to review the book for Amazon.com, than Anthony Bourdain, the man who first introduced readers to the wide array of lusty and colorful characters in the restaurant business? We asked Anthony Bourdain to read Heat and give us his take. We loved it. So did he. Check out his review below. --Daphne Durham
    Guest Reviewer: Anthony Bourdain

Anthony Bourdain is host of the Discovery Channel's No Reservations, executive chef at Les Halles in Manhattan, and author of the bestselling and groundbreaking Kitchen Confidential, Anthony Bourdain's Les Halles Cookbook, A Cook's Tour, Bone in the Throat, and many others. His latest book, The Nasty Bits will be released on May 16, 2006.

Heat is a remarkable work on a number of fronts--and for a number of reasons. First, watching the author, an untrained, inexperienced and middle-aged desk jockey slowly transform into not just a useful line cook--but an extraordinarily knowledgable one is pure pleasure. That he chooses to do so primarily in the notoriously difficult, cramped kitchens of New York's three star Babbo provides further sado-masochistic fun. Buford not only accurately and hilariously describes the painfully acquired techniques of the professional cook (and his own humiations), but chronicles as well the mental changes--the "kitchen awareness" and peculiar world view necessary to the kitchen dweller. By end of book, he's even talking like a line cook.

Secondly, the book is a long overdue portrait of the real Mario Batali and of the real Marco Pierre White--two complicated and brilliant chefs whose coverage in the press--while appropriately fawning--has never described them in their fully debauched, delightful glory. Buford has--for the first time--managed to explain White's peculiar--almost freakish brilliance--while humanizing a man known for terrorizing cooks, customers (and Batali). As for Mario--he is finally revealed for the Falstaffian, larger than life, mercurial, frighteningly intelligent chef/enterpreneur he really is. No small accomplishment. Other cooks, chefs, butchers, artisans and restaurant lifers are described with similar insight.

Thirdly, Heat reveals a dead-on understanding--rare among non-chef writers--of the pleasures of "making" food; the real human cost, the real requirements and the real adrenelin-rush-inducing pleasures of cranking out hundreds of high quality meals. One is left with a truly unique appreciation of not only what is truly good about food--but as importantly, who cooks--and why. I can't think of another book which takes such an unsparing, uncompromising and ultimately thrilling look at the quest for culinary excellence. Heat brims with fascinating observations on cooking, incredible characters, useful discourse and argument-ending arcania. I read my copy and immediately started reading it again. It's going right in between Orwell's Down and Out in Paris and London and Zola's The Belly of Paris on my bookshelf. --Anthony Bourdain

    Book Description

Bill Buford—author of the highly acclaimed best-selling Among the Thugs—had long thought of himself as a reasonably comfortable cook when in 2002 he finally decided to answer a question that had nagged him every time he prepared a meal: What kind of cook could he be if he worked in a professional kitchen? When the opportunity arose to train in the kitchen of Mario Batali’s three-star New York restaurant, Babbo, Buford grabbed it. Heat is the chronicle—sharp, funny, wonderfully exuberant—of his time spent as Batali’s “slave” and of his far-flung apprenticeships with culinary masters in Italy.

In a fast-paced, candid narrative, Buford describes the frenetic experience of working in Babbo’s kitchen: the trials and errors (and more errors), humiliations and hopes, disappointments and triumphs as he worked his way up the ladder from slave to cook. He talks about his relationships with his kitchen colleagues and with the larger-than-life, hard-living Batali, whose story he learns as their friendship grows through (and sometimes despite) kitchen encounters and after-work all-nighters.

Buford takes us to the restaurant in a remote Appennine village where Batali first apprenticed in Italy and where Buford learns the intricacies of handmade pasta . . . the hill town in Chianti where he is tutored in the art of butchery by Italy’s most famous butcher, a man who insists that his meat is an expression of the Italian soul . . . to London, where he is instructed in the preparation of game by Marco Pierre White, one of England’s most celebrated (or perhaps notorious) chefs. And throughout, we follow the thread of Buford’s fascinating reflections on food as a bearer of culture, on the history and development of a few special dishes (Is the shape of tortellini really based on a woman’s navel? And just what is a short rib?), and on the what and why of the foods we eat today.

Heat is a marvelous hybrid: a richly evocative memoir of Buford’s kitchen adventure, the story of Batali’s amazing rise to culinary (and extra-culinary) fame, a dazzling behind-the-scenes look at the workings of a famous restaurant, and an illuminating exploration of why food matters.

It is a book to delight in—and to savor.

5 out of 5 stars A humorous read that made me hungry!.......2007-10-07

Who wouldn't want to go on Buford's journey? He's a great tour guide on his gasto-tour of the kitchens of the Mario Batali and Pierre Marco White. He shows that kitchens can be places that are filled with potential dangers and loads of passion. It took me awhile to get through this book, in part because I kept getting hungry and had to go make something to eat! I'm ready to go clamp the pasta machine to the counter and whip up some fresh pasta.

It's a pretty dense book to get through, and the author wanders away from the main story often. Most of the time, it's to an interesting place, but sometimes, it's just a tangent. But aside from a few of those as a distraction, I thought this was a great book.

3 out of 5 stars Interesting but not what I thought it was going to be.......2007-09-19

I got this book because my husband heard an interview on the radio and thought I would like it since I love to cook. It was interesting but spent too much time, for me, on the politics of working in a restaurant kitchen and not enough on the workings of food in a restaurant. I bored with the personalities and gave up trying to figure out who was who.

    4 out of 5 stars I think I made the pages soggy..........2007-09-17

This guy, Bill Buford, is pretty amazing. Despite the danger of slicing off his hands entirely (an accident that he somehow manages to repeat) under various huge, sharp, professional knives, he insisted going (back again and again) to Italy to learn about things so obscure even professional chefs wouldn't have much idea about.
If you're looking for a book about Batali, this isn't the most comprehensive one, but it's scathingly honest and if you really live and breathe food, you'll gain a whole lot more than goss about the inner workings of Batali's businesses. It gets a bit soppy at times - a bit too "Tuscany is beautiful, and Provence is the ultimate foodie heaven", but only fleetingly, and all can be forgiven once you read about the author's hilarious effort to cook a whole pig...

    3 out of 5 stars ZZZZZZzzzzzzzzzzzzzz.......2007-09-11

The chapters on Mario Batali and the dynamics of his kitchen were really interesting and engaging. I was intrigud by the sections on Marco Pierre White as I had just read Gordon Ramsey's autobiography in which his tempestuous relationship with White plays a significant role. The rest of Buford's book is just too tediously, self-indulgently written to the point where it killed my interest in the underlying subjects of pasta making and butchery (I ended up skimming page after page as I just couldn't take it). It reminded me of a computer spitting forth every bit of information in its memory regardless of relevance or interest. Just too many tedious, boorish details.

    5 out of 5 stars BRAVO!.......2007-09-11

If you've ever wondered what it would be like to work in a professional kitchen... this is the book makes you feel like you are there. Ver interesting and delightful to read. Very different than any other book I've read.

5 out of 5 stars When your under fire the only way to survive is to hit back........2003-01-18

This is the third book in the series. An introduction by David Drake is followed by: But Loyal to His Own, At Any Price, The Butcher's Bill, Hangman, The Irresistible Force, Cultural Conflict, Liberty Port and Standing Down. Many of the stories are important to the Hammer's Slammers' universe. But Loyal to His Own and Standing Down are about Hammer himself, as a man and a commander. The Butcher's Bill is the first story written about the Slammers. The new story is Irresistible Force which continues the story of Lamartiere, who we met in The Immovable Object - which makes TWO stories set in the Hammer's Slammers universe about a character who was never trained to drive or fire or do anything with a tank!
This book is a must because many of the repeat stories are in books that have been out of print a very long time.

3 out of 5 stars passes the time.......2002-03-13

This was the first David Drake book I read and I may give one of his complete novels a look. This book was ok. It didn't capture me with either the military fiction or the character development. It seemed like a passable way to spend some time when there was nothing more pressing to read. Of course, I am judging novel type character development on a collection of short stories...but it seemed flat. It certainly didn't compare to Heinlein's "Starship Troopers" (The book, not that wretched movie), or to Card's "Ender's Game".
I've heard that Drake's books are pretty good, it maybe that this compilation of short stories doesn't do his work justice. If you're interested in this genre, I'd start somewhere else to get something really captivating.

5 out of 5 stars One Of the Best Military Fiction Books Ever.......2000-05-08

One of the best of David Drake's works. Definatly recomeded for Slamars lovers or if you are interested in military/science fiction.

5 out of 5 stars Military Science Fiction at its' Best!!.......1999-02-12

David Drake does it again. This book is must reading for the military science fiction enthusiast and should be read by every combat officer in the US Army as a primer for what to do and what not to do as a leader. "Every leader thinks he can lead his men into heaven" but not all do. Read this book and understand why.

    5 out of 5 stars A well done work.......1999-01-03

Drake has done it again. In this work he captures the feeling of the front line troops and the human effect of war. As always, a well done work.

4 out of 5 stars BUTCHERS BILL IS PAYS OFF BIG!.......2002-12-10

This series is by far the best action/adventure of it's type out there today.
If you like SEAL TEAM 7 then you will LOVE this series even better. The rawness and savagery are written extremely well with characters that are not perfect - but extremely interesting to delve into time and again.
Sgt. Night Runner is by far the most interesting of the team with his American Indian background coming more and more to the fore with each novel, turning him into a warrior of old with new technology helping.
What I like about this series is Mr. Smith always starts right off in the thick of things without bogging you down with boring political jargon. His action scenes are very colorful and well thought out. You can tell that he is a writer with firsthand experience with this.
I normally don't read this type of genre, but thank god for Amazon.com for getting me interested. I have purchased all of the novels and will be a James R. Smith fan for as long as he writes this top-notch adventure.
    Thanks Mr. Smith!

4 out of 5 stars THIS IS ONE OVER-LOOKED ADVENTURE AUTHOR!!.......2002-12-03

This 3rd in the FORCE RECON adventure series is an all-out assault on the combat senses, giving the reader a front row seat for high octane action/adventure.
The only complaint I have is that they are too short. The Team Midnight are at it again in Kosovo, fighting Serbs as well as their own bombing raids.
The new character called Perfect was delicately written and was a plus for this growing action series.
You can tell that the author loves to write about his favorite character - Night Runner - because even though he is not the main character - he is by far the most interesting.
Jack Swayne, the leader of team midnight, is a great character whom is both smart and deadly when the time is ripe.
Being stuck behind enemy lines and surrounded by armed Serbs isn't enough, throw in a crazy dictator and Swayne's love interest as his captor, and you have a great action read.
This is a must for action fans of all genres. Man, this author was a great find. If you haven't tried this guy out - then hurry and order your books now, or look in your used book stores for past novels by this author. He doesn't disappoint!

Her allusions are shattered when she learns that the secret, back door, government society that has sanctioned this mission has deemed her a liability.

I read the Flux and Anchor series for the first time a loooooong time ago. I found it a fascinating story, one that I would recall for its science and fantasy, respectively. I must say, I also considered it a book with merely fair writing at times; but, don't be disappointed by it and let that ruin your experience, because it gets better as you go along. Anyway, as I began to read the latest theories of quantum physics I was drawn back to the series. I saw a correlation between Flux and the reality in which we currently understand the Zero Point Field and the coordinating theoretical technology. It was quite interesting to contemplate the Zero Point Field in relation to magic as a result. Overall, a fun read.

                        Book Description

A Buddhist nun goes AWOL to roam the French countryside and discovers a wild spirituality. A hellish trip through the mountains of Peru turns mystical and offers a vision. More than just adventure, the writing in A Woman's Path shares the unforgettable moments when a journey opens a traveler's eyes and profoundly alters who she is. Around the globe and across all religions, these tales of discovery offer an uncommon look at personal transformation, whether by the trials of stolen luggage and harrowing rides or the joys of seeking out extraordinary people, places, and experiences. Inspiring and insightful, this illustrated collection invites all women to step outside their everyday lives and welcome an awakening. Contributors include Anne Lamott, Maya Angelou, Linda Ellerbee, Kim Chernin, and Natalie Goldberg, among others.

5 out of 5 stars A Path to the Inner Realm.......2005-08-27

Appropriately, "A Woman's Path," a collection of women's spiritual travel writing, was a Mother's Day gift from my daughter. I am a writer, too, frequently writing about my journeys across physical geography but equally spiritual terrain. Nothing explores us as much as our exploring of the world around us. Travel means a stretching of our personal comfort zones, as we leave our homes and our routines far behind.

In the more than 30 essays in this collection, women of a wide array of backgrounds perceive the world around them with uniquely feminine perspectives. Authors as known and respected as Anne Lammott, Maya Angelou, Natalie Goldberg, Diane Ackerman, and many others tell of their journeys, inner and outer ones, as they deal with joy, grief, discomfort, sickness, achievement, healing, and enlightenment. Destinations are as varied as Peru, India, France, Ireland, Greece, New York City, Niger, Poland, the Appalachian Trail, and others. These are women undergoing a spiritual transformation, and their travel essays take us along, to be transformed by their accounts. They take on their journeys as women and only women do, coping with societal expectations and prejudices, dealing with the fears of being a woman in the wild, finding courage when all falls down around them. As women do.

I have always believed the best training for life is to travel. Travel teaches us to stretch ourselves. Travel reveals the differences between us and everybody else, instilling understanding of the cultures varied from our own, and then again, travel soothes with the discovery of how alike we all are in our bonds of humanity, crossing all boundaries of class, culture, religion, ethnicity. Travel builds courage, as we are inevitably faced with our fears, only to overcome them. Travel connects - the traveler with the world and its inhabitants, with nature and spirit, with the divine in ourselves and outside of ourselves. The world is surely the best classroom.

If I have only one "wince" about this collection, it is the sidebar boxes interspersed throughout the essays. Each box has a clip by some other author than the one of the essay, the themes often disconnected from the main story. They drew my eye away just when I was immersed in someone's journey. I would suggest deleting them, or transforming them into epigrams prior to each essay.

"A Woman's Path," edited by Lucy McCauley, Amy G. Carlson, and Jennifer Leo, is a pilgrimage to be enjoyed by every woman who reads it, whether on the road herself, or from her armchair, traveling in spirit.

5 out of 5 stars Inspired Female Prose.......2003-06-10

I had been looking for a collection of writings by female writers that could inspire and lift my spirits in these darker days. I was fortunate enough to receive "A Woman's Path" edited by Lucy McCauley, Amy G. Carlson and Jennifer Leo as a gift from a friend. What a little treasure.

With stories by Anne Lamott, Maya Angelou, Linda Ellerbee, and the editors I was struck by the purely sensitive and female perspective of these writings. I loved the sense of pilgrimage and journey and truly believe this could be that one book I keep in my backpack for those day long / week long / month long excursions I am lucky enough to take. It's travelers bible and will keep you company along your way.

                        Really beautiful and highly recommended!

5 out of 5 stars An incredible collection of women's spiritual writing!.......2000-07-14

I was very impressed by the stories included here--Anne Lamott, Maya Angelou, Natalie Goldberg, Kim Chernin...etc. These are not dry stories about spirituality--but rather transformative tales about how these women writers are changed by their travel experiences. Very inspirational and illuminating-read this book.

5 out of 5 stars An inspiring and exciting read..........2000-07-12

While looking for information, inspiration (and even a little soothing) in the travel section of the bookstore a few days ago, I picked up this book. Taking you through the highs and lows of life and traveling, it is especially wonderful for anyone who is planning to do a bit of exploring on their own. The stories speak in many different voices from many different places, but all with one strangely similar and strong spirit. It has been so enjoyable that I after I finish this review, I'm going to buy another book in the series. A beautiful collection - buy it, read it, and travel!
