Yeasts are the world's premier industrial micro-organisms. In addition to their wide exploitation in the production of foods, beverages and pharmaceuticals, yeasts also play significant roles as model eukaryotic cells in furthering our knowledge in the biological and biomedical sciences. In order for modern biotechnology to fully exploit the activities of yeasts, it is essential to appreciate aspects of yeast cell physiology. In recent years, however, our knowledge of yeast physiological phenomena has lagged behind that of yeast genetics and molecular biology. Yeast Physiology and Biotechnology redresses the balance by linking key aspects of yeast physiology with yeast biotechnology. Individual chapters provide broad and timely coverage of yeast cytology, nutrition, growth and metabolism - important aspects of yeast cell physiology which are pertinent to the practical uses of yeasts in industry. I found this introduction to yeast physiology and biotechnology to be well written and enjoyable to read. That being said, I gave it only 2 stars because the price is absolutely ridiculous. The coverage of most topics is rather superficial (not always a bad thing in an overview-type text, but inexcusable in light of the exorbitant cost of this boook), and the material is rather dated (this being a paperback edition from 1998). I'd definitely recommend that those interested in yeast research check out a copy from a library, or buy it if you can find a used copy for around 25% of the new price, but otherwise it is just not worth it.

Biased, but allows one to feel more versed on the subject........2005-03-10

While, I don't believe that this book was written from a purely scientific perspective, it does have some insight.

While I won't speak or argue specifics or details contained in the book--the volatility of the subject it beyond belief--I do have reservations. The problem that I have with it is that it appears too much like the researchers started with a BELIEF, and then set out to present matter that supports their belief, rather than have a QUESTION, and set out to find the answer--regardless of what the answer might be.

Too many of the arguments could be manipulated or interpretted differently depending on what result one was looking for. It just seemed too selective when it comes to choice of information, and biased in its presentation.

None-the-less, there was research involved, and there is some useful information presented, but I wouldn't take the information blindly.

Regardless of what you believe, this book can provide you with information that would allow one to feel more versed on the subject.

Af far as writing style, it is quite easy to read, and the book is divided into 100-or-so questions, each having only a few pages devoted to it. Easy to pick-up for only a few minutes at a time.

In this rich, exciting new book, Gregg Camfield explores nineteenth-century American humor from the perspective of gender and domestic ideology, challenging recent theory asserting a broad gulf between men's and women's humor during the period and contributing vital new insights to the study of humor in general. Capturing in part I a vision of humor unique to the era, Camfield examines the period's faith in what was called "amiable humor," a genial and supple comic mode whose non- aggression makes it resist easy assimilation to theories stressing humor's basis in hostility, negation, rage, and other combative or displaced energies. Seeking to illuminate this distinct comedy, Camfield probes a related, central cultural strand--the domesticity ideal--that so often is a subject of this humor, carefully tracking contact between the two discourses and identifying their common social and intellectual roots. Turning next to four literary case-studies powerfully revealing of this contact, Camfield in part II pairs male and female humorists--Washington Irving and Fanny Fern; Harriet Beecher Stowe and Herman Melville; Mark Twain and Marietta Holley; and George Washington Harris and Mary Wilkins Freeman--not only to demonstrate the way these influential writers approach domesticity with genial humor, but also to support his claim that gender difference does not always correlate to differences in viewpoint and practice within this common style.
