Unlike other human senses, the exact mechanisms that lead to our perception of flavor have not yet been elucidated. It is recognised that the process involves a wide range of stimuli, which are thought likely to interact in a complex way, but, since the chemical compounds and physical structures that activate the flavor sensors change as the food is eaten, measurements of the changes in stimuli with time are essential to an understanding of the relationship between stimuli and perception.It is clear that we need to consider the whole process - the release of flavor chemicals in the mouth, the transport processes to the receptors, the specificity and characteristics of the receptors, the transduction mechanisms and the subsequent processing of signals locally and at higher centres in the brain.This book provides a state-of-the-art review of our current understanding of the key stages of flavor perception for those working in the flavor field, whether in the academic or industrial sector. Gordan Ransay's Passion for Flavours quickly became one of my favorite book. Not one of my favorite RECIPE books, but one of my favorite books I've ever read. All those mouthwatering recipes, in those bright, colorful pictures, makes me want to try them every weekend - it's when I have time to cook. A must be in every collection of those who love to cook for your beloved ones. This book made Gordon's passion becoming my own.

Protecting the health of family members is one of the major responsibilities of women in the Turkish family. Studying women's changing roles from within a rural family, the author presents a complex network of social relations which incorporates both traditional healing methods such as bone-setting and the services of the nationally sponsored health clinic. Following a patient-centered ethnographic approach, the book reveals the community's construction of the "natural" caring of mothers, wives, daughters, and daughters-in-law. Muslim practice and Islamic revivalism; tradition and modernity; global, national and regional identity; and gender shape local concepts of health and illness. For example, a villager who does not believe that microbes cause illness may be flown to relatives in Germany for a surgical operation. Describing the verdant and rugged coast and the everyday life of the spirited individuals who inhabit it, this study examines the metaphors used to describe the body and its suffering--from birth to death--and places a small Black Sea village community in the global context of labor migration, religious trends, and medical technologies.

I'm from Williamsport, where Hawkes teaches writing at Lycoming College, and so I've long known about his unusual story-telling gifts. This is a finely realized piece about two men who've been living alone for years, mapping the terrain in the American West, and the changes that occur in their relationship when various outsiders -- including a woman who has come to make an independent film -- come into their "terrain." Richly layered with unobtrusive symbols and interrelationships, also well-informed about its subject matter. Recommended.

Surveyor an oasis in the desert.......2000-03-31

As with his other novels, G.W. Hawkes offers in Surveyor deeply felt characters, intriguing plot lines, and sharply honed language. Metaphor, mystery, and the best kind of suspense--that which comes from a caring for the characters drawn on the page--keeps the reader turning not just from page to page but chapter to chapter. The relationship between the two desert-bound friends, their history, and the "invasion" of their space by a beautiful woman comingle to create a richly intriguing and well-wrought tale. Hawkes is able to divine the mysteries of the deeper forces of our lives and reveal them--in subtle desert colors, in the rhythm of dialogue, in the stirrings and gaits of character--across the pages of Surveyor with brilliant craft and utmost care.

A very sensitive and intelligent writer, Hales painted an honest and compelling story of an important time in history for a young college student. His description of his work, the land, and his discovery of self cause a reader to reflect on experiences that lead to finding meaningful life work. I recommend the book.
