                  From the author: A simulation technique for nonisothermal flow analysis of non-Newtonian fluid in a nonintermeshing counter-rotating twin screw extruder was developed by modifying the flow analysis network (FAN) method. The local shear viscosity in the flow field was calculated by an iteration method combing the three types of mean shear rate functions. The modified Cross model and an Arrhenius-type function for temperature dependence were also introduced. Streamlines in the flow field are represented by computing the movements of fluid particles based on the flux fields. The computed residence time from the streamlines led us to solve the energy equation by replacing the coordinate system. The profiles of pressure, shear rate, shear viscosity, temperature, and residence time were simulated. The influence of operating and geometrical parameters on the screw characteristics are discussed. Further, residence time distribution (RTD), strain distribution function (SDF), and interfacial area growth are predicted from the computation of streamlines to analyze the mixing capabilities of the extruder.

Granof's magical tour takes us to Modica, where Franco and Pierpaolo Ruta of the Antica Dolceria Bonajuto create chocolate pastries using a five-hundred-year-old recipe that originated with the island's Bourbon conquerors, and to the Baroque town of Noto, where master pastry chef Corrado uses jasmine blossoms planted by Saracens more than a thousand years ago to flavor his jasmine gelato. Granof goes on a quest to find the most authentic ingredients and recipes, including delectable homemade ricotta made from the milk of sheep that graze on fragrant herbs and pistachios that grow in the shadow of Mount Etna, the island's still active volcano.

                          In Sicily, every holiday and festival has its proper sweet accompaniment: marzipan lambs at Easter, honeyed pastry fritters at Christmas, crunchy, clove-scented cookies called "bones of the dead" for All Soul's Day. Granof explores these customs and festivals, gathering heirloom recipes, along with local anecdotes and advice. In addition to sweets that are already familiar to Americans, such as cannoli, cassata, and lemon ice, she introduces us to dozens of delectable pastries, confections, and cookies that are destined to become favorites as well.

                          Here I am. It's Dec 23. I'm trying to make some pastries for Christmas eve dinner. I just found out the hard way that the recipe for "Pasta Frolla", is garbage. 'Garbage' is not the word I would normally choose given my level of anger and frustration, but I'd like the review to stand so others know not to follow in my footsteps. If Hurricaneman can make it following her recipe, I bow to his superior skillz.

                          Her recipe calls for 5 cups flour to 1 cup butter. All the recipes I find in a brief online search have a ratio much closer to 3:1. I didn't even finish adding all the flour before my "soft dough" was a bowl of fine powder.

                          Being full blooded Sicilian myself, I have a feeling that these bakers who she "sweet talked" gave her bogus recipes just to get this woman out of her hair. I know that's what I'd do and I know plenty of Sicilians who would resort to similar tactics to protect their trade secrets. :-)


                          5 out of 5 stars Excellent Book and A Must-Have .......2005-03-15

                          I can tell you from experience that this cookbook is much more than just a cookbook. It's a manual for creating authentic Sicilian pastries and desserts. I learned many guarded secrets working for an Italian Bakery in my youth, and can say that this book should have never been published. Now all the secrets are out.

                          Some reviewers have complained of typos in the book. If there are any typos, I believe contacting the publisher and author could easily clear the air and correct any mistakes. The author went through a lot of trouble flattering her interviewers and humbling herself before others to obtain these recipes, I'm sure she would want purchasers of her book to be successful creating these masterpieces. She even went so far as to list suppliers for hard to find items. Personally, I've noticed NO TYPOS!

                          The history in this book is wonderful. However, the recipes are very inconsistent. Missing ingredients, etc. make it impossible to use this cookbook. I tried twice to make the Little Tea Cookies (pg.70) with no success. The dough would never come together (obviously some ingredient is missing).

                          This is a fantastic book! The recipes are great and the photography is really beautiful. The history of the island is so fascinating and is covered well in this book. It is a nice set up to the recipes... its wonderful to get some background on why Sicilian pastries are the way they are. I also enjoyed learning which pastries are associated with religious observences. This book also brought back great memories. The Ricotta Turnovers in the book are very similar to the "Cassateddi" that my Sicilian grandmother loves. The author does an excellent job of providing mail order resources for some hard to get ingredients and provides infomation on how to make a reasonable approximation of other components yourself. (like Fresh Ricotta) I would also like to clear up a misconception. Two previous reviewers indicated that there was a typo on the Chewy Pistachio cookie recipe just because flour was not listed. It is NOT an ingredient in the cookie. If you read further and pay attention to the instructions, flour is not called for. Not every cookie has flour and not every cookie is made like Americans make things. As for the person who said that the picture showed flour... rest assured, the cookie is dusted with powdered sugar which is in the recipe (and much tastier than dusting it with flour). No typo there, just a different (and delicious)type of cookie.

                          This is a wonderful book to enjoy and to give as a gift. This pictures are lovely. The history included makes it all that much more interesting.

                            The recipes and serving suggestions in this book are delicious and gorgeous, and consequently sometimes very difficult to make. Some ingridients that are listed are either not available in the US or substitutes are not adequately displayed. The recipes can sometimes lack vital explanation for a beginner, and a recipe may reference a basic recipe (the appendix contains recipes for basic components of desserts), without listing the additional ingridients needed for the recipe. The difficulty ratings can be deceiving. Nonetheless, I give this book 5 stars because the end product after hours of trying, restarting and wasting lots of egg yolks, is always fantastic.

                              It is the popular fantasy among many, to be stranded on a deserted island with a movie star. My personal favorite would be Harrison Ford, but it is likely to never happen. "Dessert Island" addresses this fantasy in a unique and humorous way. If you were stranded on a desert island, who would you want to be there with, and wouldn't you dream of desserts too? What would happen if you got sick? If it was that time of the month? If there was no water? Neil addresses all of these points and more.

                              Kee is the assistant to a film star, aboard a yacht where a wrap party is taking place. Her boss, also her lifetime friend, has the hots for her co-star Jack Conway. He's there on the yacht too, but is trying to ignore her come-ons. Kee flinches with embarrassment for Darcy and tries to stay in the shadows, avoiding the limelight. She would have been fine if the wind hadn't blown her dress up to a torch and caught it on fire. She would have been okay if anyone had noticed her before she decided jumping into the ocean was the only way to put out the flames. Someone did notice her jumping overboard and he jumped in after her. They would have been fine if only he'd notified someone about what was happening. No one noticed, and the yacht sailed on without them.

                              Making it to the tiny island was no easy task, and calling it an island is a stretch. Basically, the two landed on a rock in the ocean. How will they survive? When will they be rescued? And what exactly does one do to pass the time with a hunky movie star? When you are quite tall, slightly overweight and have low self-esteem, it isn't all flirting and flaunting. Through self-preservation, eating raw fish, a lack of cigarettes and bouts with fever, Jack and Kee come to know each other for so much more than their surface image. What will happen to them? Will they ever use the two condoms they have among their meager possessions?

                              Not all romance and fantasy, "Dessert Island" has its share of action and suspense. While it may appeal more to women at first glance, men will also enjoy this book. Dessert Island is a wild and fun read. The characters are deep enough to be real and real enough to come to life in your mind's eye. The predicaments they get into are not exactly what one fantasizes about in this situation but make for an entertaining story. "Dessert Island" would make an excellent movie and certainly is a great beach book. You'll laugh your way through to the end and find yourself turning pages faster and faster to find out what happens next. M. Margaret Neil has produced a satisfying tale that is full of real life issues and fantasy fun.

                              This book made me laugh by page three. The author has a unique turn of phrase that is very engaging. Dessert Island will never make Oprah's list - it's not angsty or inspirational - just a quick read that will entertain you. M. Margaret Neil gets better and better with each romantic comedy.
