    Product Description

The vocabulary of biology is made easier through knowing the meanings of elements that make up whole words. English continues to adopt words from foreign languages and to build its vocabulary by inventing new words from old elements. Most of the words entering English every year reside in technical vocabularies and knowing what the elements mean prepares medical students and physicians, the practitioner of any biological science, and anyone else to decipher these new words that might name a newly discovered microbe or mastodon, a disease, or a surgical procedure

            Description:
The knowledge-based pattern recognition (KE) approach provides a basis for classification of state of fluid systems. The new method determines bubble size distribution at high pressure that is very important for the brewery industry and other alcoholic beverages (champagne). Conforming to the principle of ''decreasing precision with increasing intelligence'', the KE approach has been applied to the determination of bubble size distribution. An important feature of these architectures is that they do not require global mathematical modeling of the system.

              Description:
Differential mobility spectra for alkanes, alcohols, ketones, cycloalkanes, substituted ketones, and substituted benzenes with carbon numbers between 3 and 10 were obtained from gas chromatography-differential mobility spectrometry (GC-DMS) analyses of mixtures in dilute solution. Spectra were produced in a supporting atmosphere of purified air with 0.6-0.8ppm moisture, gas temperature of 120^oC, sample concentrations of ~0.2-5ppm, and ion source of 5mCi (185MBq) ^6^3Ni. Multiple spectra were extracted from chromatographic elution profiles for each chemical providing a library of 390 spectra from 39 chemicals. The spectra were analyzed for structural content by chemical family using two different approaches. In the one approach, the wavelet packet transform was used to denoise and deconvolute the DMS data by decomposing each spectrum into its wavelet coefficients, which represent the sample's constituent frequencies. The wavelet coefficients characteristic of the compound's structural class were identified using a genetic algorithm (GA) for pattern recognition analysis. The pattern recognition GA uses both supervised and unsupervised learning to identify coefficients which optimize clustering of the spectra in a plot of the two or three largest principal components of the data. Because principal components maximize variance, the bulk of the information encoded by the selected coefficients is about differences between chemical families in the data set. The principal component analysis routine embedded in the fitness function of the pattern recognition GA acts as an information filter, significantly reducing the size of the search space since it restricts the search to coefficients whose principal component plots show clustering on the basis of chemical family. In a second approach, a back propagation neural network was trained to categorize spectra by chemical families and the network was successfully tested using familiar and unfamiliar chemicals. Performance of the network was associated with a region of the spectrum associated with fragment ions which could be extracted from spectra and were class specific.

                Description:
The paper reports the use of a chemoresistive multisensor array for recognition of some adulterated Italian wines (two white, four red, two rose) added with methanol, ethanol or other same-colour wine. A multisensor array constituted by four thin-film semiconducting metal oxide sensors, surface-activated by Pt, Au, Pd, Bi metal catalysts, has been used to generate the chemical pattern of the volatile compounds present in the wine samples. The responses of the multisensor array towards wines tested by headspace sampling have been evaluated. Multivariate analysis including principal component analysis (PCA) as well as back-propagation method trained artificial neural networks (ANNs) have been applied to analytical data generated from the multisensor array to identify both the adulteration of wines and to determine the added content of adulterant agent of methanol or ethanol up to 10vol.%. The cross-validated ANNs provide the highest achieved percentage of correct classification of 93% and the highest achieved correlation coefficient of 0.997 and 0.921 for predicted-versus-true concentration of methanol and ethanol adulterant agent, respectively.

Danny Meyer is the owner of the three-star New York City Union Square Cafe, and Michael Romano has been chef there since 1988. Together they've compiled some of their best-loved recipes, some of which have been on the menu since the restaurants opening, peppering them with clever notations and excellent wine suggestions. Their style is Italian-inspired new American and includes dishes like Orange-Fennel Osso Buco and Ratatouille-Stuffed Zucchini Blossoms. There's also an entire section devoted to mashed potatoes. Prepared with everything from over-dried tomatoes to eggplant, ginger and garlic, the restaurant's variations on this distinctly American dish are among its most popular offerings. The book won the 1995 Julia Child Cookbook Award in the First Book Category.

                          Book Description

Union Square Cafe serves some of the most imaginative, interesting, and tasty food in America. The restaurant and its owners, Danny Meyer and chef Michael Romano, have been lauded for their outstanding food and superb service by Gourmet, Food & Wine, the New York Times, and the James Beard Foundation. Now its devoted fans from down the block and across the globe can savor the restaurant's marvelous dishes, trademark hospitality, and warm decor at home.

Offered are recipes for 160 of Union Square Cafe's classic dishes, from appetizers, soups, and sandwiches to main courses, vegetables, and desserts. Hot Garlic Potato Chips, Porcini Gnocchi with Prosciutto and Parmigiano Cream, Grilled Marinated Fillet Mignon of Tuna, Herb-Roasted Chicken, Eggplant Mashed Potatoes, and Baked Banana Tart with Caramel and Macadamia Nuts are some of the all-time favorites included in this long-awaited collection.

Union Square's recipes are easily mastered by home cooks. They call for ingredients that are widely available (mail-order sources are listed for those few that are not), employ familiar techniques, and take a reasonable amount of time to complete. Amateurs and pros alike will find the dishes here as accessible as they are irresistible.

Beyond just providing recipes, The Union Square Cafe Cookbook inspires confidence in home cooks by sharing Michael Romano's tips for success. Readers learn that soaking baby onions in warm water makes them easier to peel (in the recipe for Sweet Peas with Escarole, Onions, and Mint); that the Corn and Tomatillo Salsa served with Polenta-Crusted Sea Bass also goes well with barbecued chicken or pork; that leftover Sautéed Spinach with Garlic makes a great sandwich filling; and that yesterday's sourdough bread should be kept for such soups and salads as Ribollita and Sourdough Panzanella. Danny Meyer's wine suggestions, inspired by the restaurant's remarkable cellar, accompany almost every recipe.

The Union Square Cafe Cookbook does the rare job of capturing the bustling energy and ebullient enthusiasm of the restaurant itself and the spirited personalities—those of Danny and Michael—that drive it. Folks will still go out of their way to eat at Union Square Cafe, but this cookbook—filled with the restaurant's vitality, warm artwork, and tempting recipes—ensures that its pleasures are as close as your bookshelf.

Great book with easy to follow instructions.... a damn shame there is not as many pictures of the food, but really happy!

5 out of 5 stars Excellent cook book.......2006-07-13

I have been lucky enough to eat at this restaurant on more than one occasion, so I can tell you that if you follow the recipes you will feel like you are actually eating food prepared by them. (Although, you can never replace the experience of dining at the resturant - IMO the best restaurant in the City!) I love the tuna and the polenta as well as the turnips. Yum.

5 out of 5 stars I have two words for you: BAR NUTS.......2004-01-22

I probably would violate some copyright law if I put the short and simple recipe for Bar Nuts into this review, but I'm really tempted. They are far and away the most delicious little snacky to have around when guests arrive. Once you've provided them to your friends, they will insist you bring them to every future gathering. And make them right as folks arrive: the aroma that perfumes the whole house is intoxicating, and the nuts, hot out of the oven, disappear really, really quickly, so make plenty.
                          Damn, they're SO GOOD.
Okay, the rest of the cookbook is a winner, too. It was given to me as a gift from a friend who visits NYC frequently and dines at this restaurant, so, ta-da, I have a 1st edition sighed by both Meyer and Romano, owner and executive chef. The cooking is a beautiful mingling of French, Italian and other Mediterranean cuisines.
Lots of great photos to help with presentation.
Yumilicious, especially the Bar Nuts. Don't forget `em!

5 out of 5 stars The Reputation for Service Extends to Value in the Writing.......2003-11-15

There is no need to justify writing a review of a recently published book. For an older book, I always try to find something new to say which other reviewers may not have touched on. In the case of this book and it's companion volume `Second Helpings' by the same authors, about the cuisine of the same Union Square Café, that rationale is simple. Almost all of the recipes successfully fit my criteria for buying celebrity chef / restaurant cookbooks. That is, almost all of the recipes are accessible to the experienced home cook living in the northeast United States and offer resources for making their cooking more interesting.

More specifically, both volumes enrich my repertoire of Italian dishes without the need to invest in many autre ingredients. They make very good use of their 160 recipes (a magic number which seems to be the de regeur count of dishes in this type of book) without adding a large number of the usual, and usually unnecessary list of recipes for kitchen staples. They are here, but their number are kept to a reasonably small number. If I really want to make a primo veal stock, I'll check out the CIA cookbook.

My rating of five (5) stars is based entirely on comparing this book to similar, recently published books by Daniel Boulud, Tom Colicchio, and Emril Lagasse. For books of this type, the lion's share of the value is in the effective presentation of the recipes, and in this task, the authors excel. They make the small point of placing all the ingredients prep work with the ingredients list. The more one reads recipes in other books, the larger this point becomes. This practice would be on my short list of style tips for recipe writing.

There are very few black and white photographs, and I find that I do not miss the large color rotogravure look. Pages of text provide much more value. I also don't miss the wine parings, as this is only useful to a very limited audience.

                          Good value for the money.

The Union Square Cafe is consistently ranked New York City's favorite restaurant by the Zagat survey. Why? Superb yet relaxed food served in a setting both deluxe and friendly. Second Helpings from Union Square Cafe, the follow-up to the restaurant's proprietor Danny Meyer and chef-co-owner Michael Romano's Union Square Cafe Cookbook, offers readers 140 recipes for Union Square's popular fare--Italian-inflected "everyday" cooking taken to a higher, yummier, but completely cook-friendly power. Dishes like Butternut Squash and Bean Soup, Roasted Halibut Pugliese-Style, and Zucchini Purée with Marjoram exemplify the book's unique approach; simple in conception and easy to execute, they nonetheless pack flavor and style to burn.

Chapters cover appetizers to desserts, with sections devoted to pasta and risotto and to side dishes and condiments, such as the restaurant's much-loved Olive Mashed Potatoes and Apple-Pear Chutney. Sweets like Butterscotch Pudding with Brown Sugar Sauce and Chocolate Pudding Flan should also keep diners happy. A word must be said about the photographs of Duane Michals, whose signature storytelling style (depicting, for example, a seated couple's response to a cell-phone-using table neighbor) wonderfully echoes the sweetly knowing tone of the restaurant itself. With a section on basic preparations, the book should become a trusted kitchen friend. --Arthur Boehm

                          Book Description

Ask New Yorkers to name their favorite restaurant and they are likely to reply: "Union Square Cafe." Indeed, Union Square Cafe has been ranked the city's most popular restaurant by the Zagat Survey for five consecutive years and has earned many of the food world's top honors, including a James Beard Award for Outstanding Restaurant of the Year, two three-star rankings from the New York Times, seven Awards of Excellence from Wine Spectator magazine, and the James Beard Foundation's Best Chef in New York Award for Michael Romano. What makes USC stand out in a sea of other great New York City restaurants? A simple but rare combination of extraordinary food, excellent wine, and the sort of warm, genuine hospitality one typically finds only in a neighborhood spot. In this new cookbook, proprietor Danny Meyer and executive chef and co-owner Michael Romano share the delicious dishes that have kept their customers coming back for more, year after year. Following the high standards for taste and accessibility set by their award-winning Union Square Cafe Cookbook, Second Helpings from Union Square Cafe offers more than 140 inspired recipes for everything from appetizers, soups, and salads to pastas, main courses, vegetables, side dishes, and desserts. These are the dishes that USC customers have come to know and love, including such favorites as a new version of their renowned Fried Calamari, Salt-Baked Chicken, Bollito di Vitello, Roasted Root Vegetables, and Blueberry-Lemon Meringue Pie.

But, more than simply a recipe collection, Second Helpings is a valuable kitchen resource for anyone interested in elevating his or her cooking to a new level. Michael teaches home cooks how to make their own pasta, create the juiciest chicken imaginable, correctly clean morels, and add new depth of flavor to all kinds of dishes, while Danny offers lively commentary and wine accompaniments for nearly every recipe. With their able guidance, even the most inexperienced cooks can turn out spectacular food with ease and joy.

Second Helpings captures the unique spirit of Union Square Cafe not just with recipes and animated text, but also with original black-and-white images by internationally acclaimed photographer Duane Michals. A longtime friend of USC, Duane has contributed his witty visual stories and restaurant vignettes in an innovative departure from standard food photography.

On every level Second Helpings from Union Square Cafe is a cookbook you'll treasure using again and again. Like the restaurant, it will become a familiar favorite and a trusted source of great food.

5 out of 5 stars one recipe under my belt!.......2003-11-28

I just made the Turkey with Apple Cider Gravy. Hands down the best turkey I have ever prepared. All of my dinner guests for Thanksgiving this year commented that it was the best turkey they have ever had. Wow! The turkey was absolutely delicious, succulent, and wonderfully flavored by the complex assortment of ingredients that came about in the brining process and the stuffing and gravy. I used quince for the first time as an ingredient in my cooking.

The book is invitingly presented with it's story line approach through the photographs, sometimes silly. But yes, as another reviewer mentioned there is Jacque Pepin in the black and white photo essay in one chapter looking like he's truly enjoying himself. A great endorsement for this book as I love his cooking and personality as much as I do Julia Child.

I can't wait to try other recipes from this book and soon. I think that this book will become a regular for me to try out new recipes and enhance my own knowledge of my Northern Italian Nona's cooking every day.

Most of what I found true of the first Union Square Café is also true of this sequel. And, the appearance of a sequel justifies the good opinion of the first volume. The new volume continues it's contribution to my Italian repetoire and continues to do it with recipes which are exceptionally well written. The introduction to the new volume makes it clear that many, if not most of the dishes are ... from Italian restaurants and nonas. I like this, if only because I find this much more believable than if the authors took credit for the recipes themselves. I also appreciate the traditional Italian names of the dishes as it makes it easier to compare these recipes with those done by classic Italian food writers such as Marcella Hazan and Lidia Bastianich.

The new volume uses it's photographs to add a rare element of humor to the cookbook. It is great good fun to do some celebrity spotting in the pics and be reassured that if Jacque Pepin takes the trouble to eat there, something good much be going on in the back of the house.

The new volume includes a long Pasta and Risotto chapter. A welcome addition.

On the down side, I find some of the recipes fairly long. Several are probably too much for the casual cook, although I believe some of the length is due to their being very thorough in their explanations.

Since this is a sequel to a well received book, I find the Pantry section to be a waste of space. Many named preparations from the first book are repeated in the second. Since these preparations are also available in hundreds of other books, I think this is blatant padding.

Bottom line is that the book is a worthy continuation to the original.

Sometimes the ingredient lists are a bit daunting, especially if one lives outside of a major metropolitan area, but it's worth the effort. The impressive thing about the recipes included in Union Square Cafe's second cookbook is that the various flavors are distinct while working together. For example, a pasta dish with gorgonzola and fresh corn requires that you simmer the husks in a broth--what an odd notion and what a great result !
I would say that the procedures are straightforward, but time-consuming. These are recipes that you have to plan for; they are not last-minute, just home-from-work desperation dinners. With that in mind, these are tasty, perhaps even mind -(not to say waist-) expanding recipes.

I purchased a cheap paperback from a local second hand book store on a whim and I was pleasantly surprised. Though may seem a bit passe given the collapse of the reigning Communist regime, the transcription of the 3 day trial of 8 protesters of the 1968 invasion of Czechoslovakia is truly absorbing. Old style Soviet justice is apparent from beginning to end as we truly see how the deck was stacked against these people. Those working in the legal profession, predominately attorney's will find the saga gripping and full of despair.

A very well articulated book, the author, not on trial herself as she was declared legally insane amazingly got ahold of these transcripts and were subsequently submitted to the West. Should have been translated into a play or movie.

Does anyone know if author Gorbanevskaya is alive today and if so where living? This book is a must own, a historical, under-rated sleeper.

                              Book Description

Hiram the Elf has had enough—not only has Union Square Park been cleaned up and made safe, but everyone who visits the Square is so infernally nice. So with the help of Knut the rat, he launches a sneaky campaign to return Union Square to the “bad old days.” A little dog poop on the walkways, a little soap on the monkey bars, and suddenly the regulars of Union Square are at war with each other. But a boy named Jack and his reporter friend Will know that someone must be behind all the chaos. Will they discover the culprit before it's too late for Union Square?

With a lovably silly cast of characters that any reader will recognize, Jan Carr's debut novel is a brilliant combination of big laughs and sly satire. In no time you'll be rooting for Jack and Will to save the day... or for Hiram to wreck it!

                                Book Description

El Lissitzky's first suprematist book is a story about how two squares, one red, one black, transform a world. It is Lissitzky's "scientific romance," an allegory of the fourth dimension and its effect on the three-dimensional world. When it was first published in Berlin in 1922, About 2 [Squares] presented a radical rethinking of what a book was, demonstrating a new way of organizing typography on a page and relating it to visual images. It marked the beginning of a new graphic art and is among the most important publications in the history of the avant-garde in typography and graphic design.

This facsimile limited edition is reproduced in letterpress with the English translation printed on a transparent overlay to register over the original Russian.

The commentary, More About 2 [Squares], boxed in the same slipcase, provides a detailed analysis of this seminal work. Railing provides a brief historical survey of avant-garde poetry in Russia and shows how the letter/ sound was applied by Lissitzky in About 2 [Squares] as a corollary to the pictorial images - a relationship that forms the basis of abstract or nonobjective language and painting in Russia, and is the theoretical and creative source and device of Lissitzky's graphic design. Railing's is a study both of the philosophical idea of suprematism and the artistic content of Lissitzky's architectural extension of the suprematist painting of Kazimir Malevich, which he called the Proun, and of its particular role as a sequence of images used to create the story About 2 [Squares].
