Sure eels are slimy and weird, but that doesn't mean you can't learn to love them!
Read this book and instead of retching at the thought of a mouthfull of broiled eel, you'll find yourself smacking your lips (at least I did).
Overall, this book seems well researched. It's well written and an overall fun read. Like an eel, it's sluggish some times. But page after page it remains fascinating.

Tales of the Elusive Eel.......2002-04-10
If you are an American, it is unlikely that you have ever eaten eel. You are more likely to have eaten eel if you are a European, and if you are Japanese, you may well eat it regularly. It is hard to figure out just why Americans now have an aversion to eating eels and other countries do not, especially since eels are part of our Pilgrim heritage, they were enjoyed by our founding fathers, and they formed an important commercial catch earlier in the last century. Itýs all very mysterious, but if you read _Consider the Eel_ (University of North Carolina Press) by Richard Schweid, you will quickly realize that almost everything connected to eels is mysterious indeed. It isnýt just that humans deal with eels in peculiar ways; the fish itself is full of paradoxes and unsolved questions.
Schweidýs topic is the Atlantic eels of two species, the European and the American. These eels reproduce in the open sea, and early development of the young takes place there, but they drift to different fresh water sources to feed and grow to adult sizes, over a period of up to twenty years. (This is opposite to the life cycle of the salmon.) Then they stop eating forever and head to sea, changing their eyes to adapt to ocean dark, and changing body chemistry to put up with salt water and the change of water pressure. It was only in 1924 that a Danish researcher found eel larvae in the Sargasso sea, the huge area of the Atlantic Ocean between Bermuda and the Azores. All the Atlantic eels go there to mate, and then they die, but no adults have ever been seen swimming there; the only two eels found there had been eaten by other fish. We can only guess at what they are up to deep below the surface. The larvae look like little oval leaves. Depending on currents, the larvae float for thousands of miles and for years until they reach estuaries and mouths of rivers. Once they find a river with a muddy bottom and food sources, they take control of their lives. They can even cross land to get to a lake or pond over a mile away. Farming eels is quite possible, and can be lucrative, but must be done under an extraordinary disadvantage which no other farm animal presents. Eels cannot be bred in captivity. No one has been able to make them forgo their trip to the Sargasso for reproduction.
American eel fishermen and dealers, many of whom Schweid talked to in preparation of this book, have a peculiar business of trading in a product that no one they know likes. Many of them have been in business for decades, although catches are declining and sales which have to be to Europe or Japan are profitable or not based on exchange rates. Many are simply revolted by the idea of eating their product. Schweid offers to fry some for supper, and a woman who has caught eels for decades replies, ýI would never eat one. Looks too much like a snake.ý Another fisherman, when Schweid brought up the long migration of the eels said, ýI know what all the scientists say about what they do, and the trip they make. It may be right, but it ainýt reasonable.ý Whether the facts are reasonable are not, this readable account of a very strange fish and the strange people who make their living from it is full of facts that are entertaining and astounding.

Glass eels arriving from the sea use alternative migratory tactics, leading either to the colonization of rivers or to an early settlement in marine or estuarine habitats. In the field, the migration may be environmentally affected by water temperature and the migratory behavior could be physiologically dependent on the body condition (energetic status). To investigate how these environmental and physiological effects on the migration are behaviorally mediated, we experimentally tested the effects of changes in water temperature and body condition on locomotor activity (upstream swimming) and salinity preference of Anguilla anguilla glass eels. Low water temperature reduced significantly both locomotor activity and preference for freshwater, in accordance with field data showing that low water temperatures hinder both the estuarine migration and river recruitment. Glass eels switched from a freshwater- towards a saltwater-preference as their body condition decreased, confirming that the energetic status may affect the migratory behavior. We suggest that, in the wild, this condition-dependent change in salinity preference of low body condition glass eels induces an early settlement in marine or estuarine habitats. Such a behavioral shift, stopping the energy expenditure linked to river-oriented migratory behavior, may be adaptive by limiting the probability of death due to exhaustion. Our results show that the glass eel migratory behavior, through locomotor activity and salinity preference, may be controlled by interacting physiological and environmental factors.

Recent studies have revealed that many marine invertebrates are closely associated with diverse microorganisms, frequently resulting in the production of compounds of biomedical interest. Thus far, ascidians have not been widely examined for the presence of bacterial associations, although the production of secondary metabolites is well documented. In the present study, we examined the gonad of Molgula manhattensis and the tunic surfaces of Botryllus schlosseri, Didemnum sp., and Botrylloides violaceus for the presence of associated bacteria. These ascidians are common inhabitants of the coastal ocean of Cape Cod, Massachusetts. We used denaturing gradient gel electrophoresis (DGGE) as well as cloning and sequencing of 16S rDNA to analyze the microbial communities. There is a strong evidence that spiroplasma-like bacteria colonize the gonad of the solitary ascidian M. manhattensis. The bacteria might be vertically transmitted and may be involved in the production of secondary metabolites that deter predators of the ascidians. The bacterial communities found on the tunic surfaces of the colonial ascidians were found to be more diverse. However, in all cases the bacterial communities were predominated by alpha-proteobacteria. Alpha-proteobacteria related to the obtained sequences have been identified as symbionts in a variety of hosts, suggesting a specific role for these bacteria. However, based on our data it is difficult to differentiate between persistently and only transiently associated bacteria. Overall, this study demonstrates that ascidian species are associated with diverse bacterial populations. Future studies will aim to elucidate the precise relationships between bacteria and ascidians and to identify bioactive compounds that might be produced as a result of these relationships.

Most fish populations are declining worldwide and their management would benefit from a better estimation of recruitment. In glass eels, field studies suggest that estuarine migratory glass eels are sensitive enough to light to change their vertical location according to factors such as water turbidity and/or moon brightness. The response of glass eel (Anguilla anguilla L.) to light was tested in the laboratory using boxes where fish could choose between a lit and an unlit side. Responses were quantified as the proportion of glass eels remaining in the unlit chamber. Decreasing light levels were used and tested on different ''age'' glass eels (''age'' in days since capture). In addition, measures of light at different depths of the water column were carried out in the Adour estuary (43^o30' N, 1^o30' W). The glass eel light avoidance level was lower in non-pigmented glass eel (less than 10^-^1^0 W cm^-^2), than in pigmented ones (10^-^9-10^-^8 W cm^-^2). These results and field data on the measurement of light energy in the water column of Adour estuary are compared with previously published data on the estuarine migration of glass eel.

Synchronisation of swimming activity to water current reversal every 6.2 h was tested in the European glass eel (Anguilla anguilla L.). When presented with a change in water current direction, glass eels exhibited rhythmic patterns of activity with a period close to the tidal one. Glass eels began to swim with the current and then alternated between positive and negative rheotaxis after each change in the water current direction. Results are discussed in relation to the flood tidal transport theory. Following synchronisation to current reversal, glass eels subjected to constant conditions displayed a weak rhythmic activity suggesting that locomotor behaviour might, in the wild, synchronise to several environmental cues related to the tide. Results obtained with different densities also suggest that social cues might improve the synchronisation.
