                Challenges in Taste Chemistry and Biology discusses food taste from the biochemical as well as the chemical point of view. This book is divided into four sections. The first section contains an overview chapter that reviews taste transduction and perception. Four chapters that discuss the biochemistry of bitter, sweet, and pungent tastes follow the overview chapter. The second section begins with a chapter describing a new technique called taste dilution analysis, which uses the human tongue as a sensitive biosensor for tastants. This method was applied successfully to identify intense bitter taste and cooling compounds from Maillard reaction products. Structure-activity relationship and stability of newly discovered cyclic alpha-enamines cooling compounds are also discussed. The third section emphasizes peptides as taste-active compounds. The synthesis and activity of the most interesting glycoconjugates of glutamate as umami taste compounds are described. The last section discusses the factors such as viscosity on flavor perception.

It collects into a single source most of the techniques for applying the theory to the solution of particular problems. Concentrating on problems that allow exact analytical solutions of the perturbation equations, the book resorts to numerical results only when necessary to illustrate and complement important features of the theory. The author also compares different methods by applying them to the same models so that readers clearly understand why one technique may be preferred over another. Demonstrating the application of similar techniques in quantum and classical mechanics, Introduction to Perturbation Theory in Quantum Mechanics reveals the underlying mathematics in seemingly different problems. It includes many illustrative examples that facilitate the understanding of theoretical concepts, and provides a source of ideas for many original research projects.

                                I bought this book because I'm working on WKB and other approximations in photonics. My background as an undergrad is in physics, but I only spent two quarters in quantum mechanics, and found that I needed a book to beef up my knowledge in perturbation theory. As a working engineer, I was happy with the results of this book. Here's my review:

                                There are many books that go into great detail on approximating problems with perturbation theory. Many of them are too complex or advanced to meet the needs of the beginning student, self-learner, or the scientist/engineer fielding problems outside his or her own formal training.

                                Fernandez's book is a solid intro into perturbation theory. The book is completely dedicated to perturbation theory. He goes beyond what's normally found in an introductory book on quantum mechanics. Further, he develops techniques for variety of time-dependent and time-independent theories and 1-D scattering problems.

                                This is a definite must if you find yourself using perturbation theory in quantum mechanics, and in other areas (such as electrodynamics and photonics). You won't be disappointed in this book.

                                  This is a comprehensive textbook on divergent perturbation series in quantum mechanics and quantum field theory with special emphasis on practical applications. The first part of this book deals with the derivation of high-order terms of divergent perturbation series using quasiclassical path integral methods. The basic notions are introduced using ordinary integrals. The theoretical framework is applied to quantum mechanics and generalized to quantum field theories which, in particular, have important applications in the theory of critical phenomena. The material is presented at three levels of complexity: a) undergraduate, b) post-quantum mechanics I, c) graduate up to current research. The second part starts with a general introduction to resummation methods for divergent series. Subsequently, Borel's theory is implemented as a simple algorithm allowing for easy practical applications to numerous problems. This is illustrated for three typical examples, again with the above three levels of complexity. All non-trivial algebraic manipulation are programmed in special computer languages (REDUCE and RIEMANN). These algebraic as well as some numerical computer programs are supplied on a diskette to come with the book.

                                  In REBEL YELL 2, Mr. Quinn continues what he started in his first volume REBEL YELL although the collection is bigger here with 22 writers represented, including some from the previous volume. The definition of a Southern gay writer and who therefore makes the cut seems to have gotten even milkier here with the likes of Felice Picano making an appearance. According to Mr. Quinn Mr. Picano comes from New York and now lives in California-- and I suppose he has changed planes in Atlanta if that makes him a Southern writer-- in any event, he's included.

                                  There are a lot of things Southern here-- bourbon, iced tea, pickup trucks, country music, kudzu. The quality of the stories is uneven, which is not unusual for an anthology. Some of my favorites include Jeff Mann's "Emory and Henry" which is a fine account of bigotry and prejudice among a group of high school biology honors students in a small college in Virginia in 1976. The story rings true and is filled with irony as a Jewish kid leads the assault against the gay narrator. I also liked Mr. Quinn's "The Kitchen Table" in which a "straight" carpenter with a grown son must come to terms with his feelings about the gay man whose home he is restoring. But the best was saved for last. Having gotten totally engulfed in all the kudzu in "Pueraria lobata", I almost skipped the final story "Everybody Loves the Musee d'Orsay" by Marshall Moore. That would have been my loss. About the conflict between a gay son and his overbearing, controlling mother, this fantastic story is not to be missed.

                                  As a fan of Rebel Yell 1 it is with resigned disappointment that I accord this Sequel the two star rating befitting most any Sequel in any Genre. Because to my disappointment that is all Rebel Yell 2 amounts to. Outakes...leftovers. "Let's take a good thing and see how far we can make it stretch". To anybody interested in this subject matter I can only say buy the first book skip the sequel. And hold your breath together with me in hope that Jay Quinn takes a long enough breather for Rebel Yell 3 to be something FRESH.

                                  Once I had read the first book of stories about the Southern gay experience, REBEL YELL, edited by Jay Quinn, I was hoping there would be a second book of stories to follow. My wish has now come true. Jay Quinn, who authored two other wonderful books, "METES AND BOUNDS" and "THE MENTOR" has gathered together twenty-two new southern gay stories. These are exciting and touching stories of awakening gay sexuality, and the impact that religion, friends and family have on their lives. They are told from a Southern gay perspective. There stories are from such noted authors as; Jeff Mann, Jameson Currier, Robin Lippincott, and Greg Herren, as well as many other new voices in Southern gay writing. These are not erotic, sex-filled stories, but heartfelt renderings of what it is like to be gay, and from the south. There's a feeling of Southern pride and heritage in each of these stories. Whether you're gay or straight, a southern boy will always be a proud southern boy.

                                  All of these stories were a pleasure to read, but a few made quite an impression on me. "Miles Away" by Martin Wilson, tells of Michael's first sexual experience; "Jesse: November 1992" by Felice Picano, relates the emotional impact of HIV on two lifetime partners, and "The Kitchen Table" by Jay Quinn, is a truly sexy and emotional love story of the developing attraction that Phil, has for Trace, the man whose house he is remodeling.

                                  Although the stories in this volume are universal in depictions of gay life in America today, they are a welcome addition for they are told by new voices, proud voices, from a perspective of different backgrounds, emotions and life experiences. These are the voices of Southern gay men. A wonderful book for gay adults to read, as well as parents and students who are trying to understand their gay son's sexual orientation. Don't miss this one! Could there be a REBEL YELL 3 coming? I hope so!!!

                                  I came across this collection of Southern short stores by chance. A friend of mine was cleaning out his library and thought it would appeal to me and it did. "Rebel Yell" is diverse and dark and so typically Southern. There are 14 stories some of which are only fair but there are a few that are very good. Almost all of the authors write about why the South is different and then point out that Southern gay men are unique. Being a Southern gay man myself, I take issue with that stereotype. I have lived all over the world and being unique s not really a quality I find in gay men. No matter where you go in the world, gay bars and bathhouse and their patrons are basically the same. The authors in this volume claim that Southern gays place emphasis on family and that there is more prejudice against difference in the South. He also says that Southern gays identify with masculine men and are more prone to stay in the closet and lead double lives. I have to totally disagree with all of these generalizations.
                                  Putting that aside, the best story in the volume is by the editor himself, Jay Quinn. His story "465 Acres" deals with Steve who recently lost his wife to cancer and now lives with his two children with his mother. He once loved a guy named Robin whom he has not seen in 22 years.
                                  There is also "The Preacher's Son" which is a sad look on how much a religious family will do to protect their name even if it involves letting the man who murdered their gay son go free. Another good story follows the idea of "you can't go home again". "Hometown" is a love story that reminds us that once away from home, it is hard to return if not impossible.
                                  I am not sure that this is a book of stories, It reads more like memoirs and essays and almost all of the stories deal with the teenage years of the authors. Therefore there seems to be a lot of repetition and the book basically is an evocation of a time and place now gone. The gay man is the outsider. Herein lies the problem with the book. What is here is well written but what is missing is variety. It is a thoughtful and well conceived project which is honest and real--so real that it reads like biography. The plus of the book is we get to hear about the southern rural experience in gay literature.

                                  Ordered because I like Jay Quinn's _Back_Where_He_Started_, I found the stories in _Rebel_Yell_ to be diverse and dark with a couple of uplifting tales. Of the 14 only a few were memorable: "The Wilds" where a lighthouse and oleander figure prominently, "The Pump Jockey" with an implausible ending where the character does an about-face and the magnanimity of twins raises an eyebrow, and, of course, "465 Acres", Jay Quinn's own contribution. Ah, romance! I was reminded of my own upbringing in the South and could certainly identify with some of the expressions used and customs cited--although I have never eaten grits. Must be a SouthEast thing rather than a Texas thing. If you like dark, you'll like this compilation.

                                  A very repetitive collection: about 80 % of the stories are about stereotypically "gay" boys and the Liza Minelli shows they do, or about how they get beaten up by their parents. Nearly all stories are set in the 1960s and 70s and read like some kind of childhood/youth recollection.

                                  There was nothing original or significant about this collection and I think it stands for what's wrong with a lot of "gay" literature: too much stereotypes, whining and sex; too little originality, masculinity and positive thinking.

                                  The back cover says to give this collection to gay youth. I think this might be a very, very destructive and dangerous thing to do. Instead, let them read books like "Clay's Way" by Blair Mastbaum, "Boys on the Rock" by John Fox or "Metes and Bounds" by Jay Quinn (whose work has significantly deteriorated since).

                                  Don't waste your time or money on this book!

                                  Jay Quinn publishes here 14 stories by, in his words, "contemporary Southern gay authors." He doesn't clarify whether or not the writers, in order to be included in this anthology, had to be born in the South or just live there. It is impossible to tell from the brief bios of the writers if some of them meet either of these requirements, if indeed, those are the requirements for inclusion. Some of these stories are not very good, some of them are so-so-- since being polite is an innate Southern characteristic-- I won't name the stories I didn't care for-- and two or three of them are first class. Almost all the writers-- regardless of their abilities-- discuss what makes Southerners different and point out the uniqueness of Southern gays. For example, there is an emphasis on family, a greater amount of prejudice against anyone different, an identification with masculine men; and Southern gays-- at least until very recently-- were probably more prone to remain in the closet and lead double lives, at least in small Southern towns. Of course fundamentalist Christianity is the dominant religion in much of the South as well.

                                  The best story here is "465 Acres" by the editor of this volume, Jay Quinn. In this story Steve, who has recently lost his wife Janet to cancer, is living with his domineering mother whom of course he calls "Mama" and his two children. He is about to meet for the first time in 22 years or so a man named Robin whom he once loved. Mr. Quinn has perfect pitch when it comes to portraying Southern rural families in the North Carolina-East Tennessee-Virginia area. Janet's death was "the Lord's will." Steve's mother will always call friends her son's age "boy". His children are young'uns. Steve's mother, a perfectly awful human being, doesn't like Mexicans and opines that girls shouldn't go to college since they'll just get married anyway. It's worth buying this collection for this story alone. Additionally "The Preacher's Son" is a sad commentary on how far a "religious" family will go to protect their reputation even if it means letting a murderer of their gay son go practically free. Finally Walter Holland's "Hometown" is a bittersweet love story and reminds us, as Thomas Wolfe would say, that it really is difficult to go home again.

                                  I highly recommend this book of short stories. I'm currently reading it. I was particularly moved by "Happy Birthday" by Daniel M. Jaffe. It really addresses the "otherness" of growing up gay in the South.
